I know it sounds weird, but it gets so creamy, thick and flavourful.
I loved it as a non-vegan and even more now, I make it about once a month.
Then I love to write in my planner.
Now every time I cook or eat, I think about those little mountainside farms and how the vegetables in my meal were once in the earth, nourished by the sun, picked and transported right to me.
Being able to share my authentic voice and help people at the same time.
It was so so beautiful to think about growing and harvesting food for my community.
